What is special about Dexter cattle meat products?

This breed is known for its taste and health benefits. Dexters develop a unique "spider" marbling lending itself to tender cuts. And the meat is high in cancer-fighting conjugated linoleic acid (CLA), Omega 3, 6 and 9 fatty acids, and has more antioxidant vitamins such as Vitamin E. And we do not add any hormones or other chemicals in either the growing or processing. This is tasty healthy beef!

How is the flavor?

Because Dexter cattle are smaller animals and naturally tender, steaks cut to 8 oz. are going to be thicker than other breeds. This allows the chef to get a nice charred sear on the outside and easily achieve a rare or medium rare inside, giving a better depth of flavor with a small amount of very tasty beef fat.

What does custom exempt processing mean?

Custom exempt meat processing means we choose to have a mobile butcher come to the ranch to process the meat. Our Dexters are born, raised and humanely processed on the ranch with no trucking to slaughter and no time spent in stressful feedlots. Custom exempt processing allows us to have better traceability to the meat we are producing and also means we sell live shares of the cattle,not cut and wrapped product.You get to decide how you want your steaks and other cuts ordered to your liking. And we can make suggestions for great cuts if you prefer. We want to make this easy for you!

How much should I buy?

If you have the storage space and the funds to purchase upfront, buying meat in bulk is a very worthwhile way to buy from a rancher you trust. It does require a little planning! 

Use this simple guide.


How many meat eaters do you have in your household? (ex. 2)


What average size portion do they like? (ex. 1/4 pound per serving)


How many meals per week include beef? (ex. 2 times a week x 1/4 lb. per serving x 2 people = 1
lb. / week x 52 weeks = 52 lbs. / year)


Don’t forget to add in some family and friends BBQs! If this example fits you and your family, a 1/4 share is a great amount to buy for your family. 

You can always try a smaller share at first and see if it works with the way you and your family cook. Remember, you get a variety of very nice cuts from each share, from grill ready steaks and the delicious slow cook cuts. You may not be used to cooking with some of these cuts. We will get into that more in future emails!

How much beef is a quarter share?

Here's a list of the cuts of beef you'll typically get in a quarter share. 

  • 1 arm roast (3-4# each)
  • 1 rump roast (3-4# each)
  • 3 chuck roast (3-4# each)
  • 6-7 Ribeye steaks, Bone in (1" thick, 2 per package)
  • 6-7 T-bone steaks (1' thick, 2 per package) 
  • 4-5 Blade tenderized round steaks
  • 4-5 Sirloin Steaks (3/4" thick, 1-2 per package)
  • 20 - 30# Ground Beef (1# package) 
  • 1 Half Brisket
  • Stew meat (about 5 lbs.)

Optional free bones and organs ($50 value per quarter share)

Total yield for a 1/4 share: About 68 lbs. of packaged, local, grass-fed and finished delicious beef. You can also choose how you'd like your cuts done. 

Helpful tip: A brown grocery sack will hold about 30 lbs. of meat. 

A 1/4 share will take about 2-3 cubic feet of freezer space. Multiply these figures for additional quarters and you'll have a quick calculation of the end product yield and storage space needed.

How much freezer space do I need?

A 1/4 Dexter beef share takes about 2 - 3 cubic feet of freezer space. Multiply this for
additional quarters and you'll have a quick calculation of the end yield product and storage space
needed.


Here’s another way to look at it: one cubic foot of freezer space will hold about 20-25 lbs. of meat due to the shapes of the packages. If all the packages fit in close to each other, you can put about 30 lbs. of meat in a cubic foot of freezer space which is about the size of one paper grocery sack.

What is the deposit for?

The deposit holds your order of a quarter, half or whole share for you. We will continue to raise your beef on the ranch until harvest. The deposit amount will be applied to your invoice from us, the producer/grower, prior to picking up your beef!

How do I know what the total cost will be?

Below is an example of estimated product yield and costs based on an average sized Dexter.

How does the grower or producer get paid?

As the grower, or producer, of your bulk beef, after harvest, we willsend you an email with an invoice for the cost/lb. ($9.95/lb.) based on the hanging weight, minus your deposit.

When can I get my beef?

We will be harvesting in the late fall in 2023 when the cattle are at their peak of nutrition. We will notify you by email when your beef has been harvested.

Let us know how you want to pick up your beef! You may want to pick up your beef at the butcher shop or pick it up from the ranch or we can deliver it to you at no charge. That's it! Now it's time to enjoy the best nutritious beef you've ever had!
